Refreshing Fruit Jelly Milk Cake Recipe

Ingredients

  • 1/2 cup sugar
  • 2 cups milk
  • 3 tablespoons cornstarch
  • 1 packet unflavored gelatin
  • Assorted fresh fruits (such as kiwi, strawberries, oranges, pomegranate seeds, grapes, mango, etc.)
  • 1/4 cup warm water (for dissolving gelatin)
  • 1 teaspoon vanilla extract
  • 1 tablespoon measuring spoon (for accuracy)

Instructions

1) Make the creamy milk base

  1. Add milk, sugar, and cornstarch to a saucepan.
  2. Heat over medium heat, stirring continuously to prevent lumps.
  3. Continue stirring until the mixture thickens to a pudding-like consistency.
  4. Remove from heat, mix in the vanilla extract, and let it cool slightly.

2) Dissolve and add the gelatin

  1. Pour warm water into a small bowl.
  2. Sprinkle in the unflavored gelatin and let it sit for a few minutes until fully hydrated and dissolved.
  3. Stir the dissolved gelatin into the warm milk mixture until evenly combined.

3) Assemble the fruit jelly milk cake

  1. Arrange your prepared fresh fruits in a rectangular or loaf-shaped mold to create a colorful pattern.
  2. Slowly pour the milk-gelatin mixture over the fruit, pouring gently so the fruit stays in place.
  3. Tap the mold lightly to release air bubbles.

4) Chill until set

  • Refrigerate for 4–6 hours, or until the dessert is completely firm.

5) Unmold and serve

  1. Once set, carefully remove the cake from the mold.
  2. Slice to reveal the vibrant fruit layers, and serve chilled.

Tips for Best Results

  • Choose seasonal fruits for better flavor, texture, and color.
  • For extra sweetness, drizzle a little honey over each slice before serving.
  • Cut fruits into similar sizes so the cake slices neatly and looks more uniform.
