Reuben Bake with Layers of Corned Beef, Sauerkraut, and Swiss Cheese

Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
Servings: 6–8

Ingredients

  • 1 lb (450 g) corned beef, thinly sliced or shredded
  • 2 cups sauerkraut, well drained
  • 2 cups Swiss cheese, shredded
  • 1/2 cup Thousand Island dressing
  • 8 slices rye bread, cubed (marble rye also works well)
  • 4 large eggs
  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 tsp caraway seeds (optional, for traditional rye flavor)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat the oven
    Preheat to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. Build the bread layer
Scatter the cubed rye bread across the bottom of the dish. Drizzle evenly with the melted butter.

  3. Add the Reuben layers

    • Spoon on half of the corned beef.
    • Add half of the sauerkraut.
    • Sprinkle half of the Swiss cheese.
    • Repeat once more with the remaining corned beef, sauerkraut, and Swiss.
  4. Whisk the custard mixture
In a bowl, whisk together the eggs, milk, Thousand Island dressing, and caraway seeds (if using). Season lightly with salt and pepper.

  5. Pour, soak, and bake
Pour the egg mixture over the casserole. Press down gently so the bread absorbs the liquid. Cover with foil and bake for 20 minutes.

  6. Finish uncovered
Remove the foil and bake for 10–15 minutes more, until the cheese is bubbling and the casserole is set.

  7. Garnish and serve
Rest for a few minutes, top with chopped parsley, slice, and serve warm.

Tips for the Best Reuben Bake

  • For a crispier top, broil for 2–3 minutes at the end (watch closely).
  • Serve with an extra drizzle of Thousand Island dressing for more creaminess.
  • Swap in gluten-free bread to make the recipe gluten-free.
