Ingredients
Crêpes
- 1 cup all-purpose flour
- 2 eggs
- 1/2 cup milk
- 1/2 cup water
- 1/4 teaspoon salt
- 2 tablespoons butter, melted
Cream Filling
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Caramel Sauce
- 1 cup granulated sugar
- 6 tablespoons butter
- 1/2 cup heavy cream
To Finish
- Cocoa powder, for dusting
Instructions
1) Prepare the Crêpe Batter
- In a large bowl, whisk the flour and eggs together.
- Slowly pour in the milk and water, mixing as you go to keep the batter smooth.
- Add the salt and melted butter, then whisk until the batter is silky and lump-free.
2) Cook the Crêpes
- Warm a lightly greased nonstick pan or griddle over medium-high heat.
- Add about 1/4 cup batter for each crêpe, then tilt the pan in a круг motion to spread it into a thin, even layer.
- Cook for about 2 minutes, or until the underside turns lightly golden.
- Flip gently with a spatula and cook the second side briefly.
- Continue until all batter is used, stacking the crêpes as you go.
3) Make the Vanilla Cream Filling
- In a mixing bowl, beat heavy cream, powdered sugar, and vanilla extract.
- Whip until stiff peaks form, then set aside.
4) Cook the Caramel Sauce
- Place sugar in a saucepan over medium heat and let it melt, stirring as needed, until it becomes medium amber.
- Add the butter and stir until fully melted and combined.
- Slowly pour in the heavy cream while stirring continuously (it may bubble up).
- Let it boil for 1 minute, then remove from heat and cool slightly.
5) Assemble the Layered Dessert
- Lay one crêpe on a serving plate.
- Spread a thin layer of whipped cream filling on top.
- Drizzle a little caramel sauce over the cream.
- Repeat the layering until you’ve used all crêpes, ending with cream on the top layer.
6) Dust, Chill, and Serve
- Lightly dust the top with cocoa powder.
- Refrigerate for at least 1 hour so the layers set and the flavors blend.
- Slice and serve cold for the best texture and clean layers.
