Ingredients

Crêpes

  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted

Cream Filling

  • 2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Caramel Sauce

  • 1 cup granulated sugar
  • 6 tablespoons butter
  • 1/2 cup heavy cream

To Finish

  • Cocoa powder, for dusting

Instructions

1) Prepare the Crêpe Batter

  1. In a large bowl, whisk the flour and eggs together.
  2. Slowly pour in the milk and water, mixing as you go to keep the batter smooth.
  3. Add the salt and melted butter, then whisk until the batter is silky and lump-free.

2) Cook the Crêpes

  1. Warm a lightly greased nonstick pan or griddle over medium-high heat.
  2. Add about 1/4 cup batter for each crêpe, then tilt the pan in a круг motion to spread it into a thin, even layer.
  3. Cook for about 2 minutes, or until the underside turns lightly golden.
  4. Flip gently with a spatula and cook the second side briefly.
  5. Continue until all batter is used, stacking the crêpes as you go.

3) Make the Vanilla Cream Filling

  1. In a mixing bowl, beat heavy cream, powdered sugar, and vanilla extract.
  2. Whip until stiff peaks form, then set aside.

4) Cook the Caramel Sauce

  1. Place sugar in a saucepan over medium heat and let it melt, stirring as needed, until it becomes medium amber.
  2. Add the butter and stir until fully melted and combined.
  3. Slowly pour in the heavy cream while stirring continuously (it may bubble up).
  4. Let it boil for 1 minute, then remove from heat and cool slightly.

5) Assemble the Layered Dessert

  1. Lay one crêpe on a serving plate.
  2. Spread a thin layer of whipped cream filling on top.
  3. Drizzle a little caramel sauce over the cream.
  4. Repeat the layering until you’ve used all crêpes, ending with cream on the top layer.

6) Dust, Chill, and Serve

  1. Lightly dust the top with cocoa powder.
  2. Refrigerate for at least 1 hour so the layers set and the flavors blend.
  3. Slice and serve cold for the best texture and clean layers.
