Peanut Butter Rice Krispies Treats (with Vegan Chocolate Topping)
These no-bake peanut butter Rice Krispies cups are sweet, crunchy, and finished with a smooth vegan chocolate layer. They’re quick to assemble, easy to chill, and hard to stop eating.

Ingredients
- 1 cup crunchy peanut butter (chunky works best)
- 6 tablespoons honey (for extra sweetness)
- 1/8 teaspoon salt (a small pinch to brighten the flavor)
- 3 cups Rice Krispies cereal (for that classic crisp texture)
- 1 1/2 cups vegan chocolate chips (for a rich chocolate topping)
Preparation
- Prep the pan. Line a muffin pan with paper liners. Lightly spray the liners with non-stick spray so the cups release cleanly later.
- Melt the peanut butter base. In a saucepan over low heat, warm the peanut butter, honey, and salt, stirring continuously until the mixture is fully melted and smooth.
- Add the cereal. Remove from heat and immediately stir in the Rice Krispies. Mix until every piece is well coated.
- Fill and press. Spoon the mixture evenly into the lined muffin cups. Press down firmly to compact the layers and help the treats hold together.
- Melt the chocolate. In a separate saucepan on low heat, melt the vegan chocolate chips, stirring constantly until silky and smooth. Avoid overheating.
- Top with chocolate. Spoon the melted chocolate over each cup, spreading it evenly. Add swirls or simple patterns if you’d like.
- Chill to set. Refrigerate the muffin pan until the treats are firm.
