Pickled Beets (Easy Refrigerator Recipe)

Ingredients

  • 8 medium fresh beets

  • 1 cup vinegar
  • 1/2 cup sugar
  • 1 1/2 teaspoons whole cloves
  • 1 1/2 teaspoons whole allspice
  • 1/2 teaspoon salt

Instructions

  1. Prepare the beets: Scrub the beets clean and trim the tops, leaving about 1 inch of stem.
  2. Cook until tender: Place the beets in a large pot and add enough water to fully cover them. Bring to a boil, then reduce the heat. Cover and simmer for 25–30 minutes, or until the beets are tender.
  3. Cool, peel, and slice: Remove the beets from the water and let them cool. Peel off the skins, slice the beets, and transfer them to a bowl. Set aside.
  4. Make the brine: In a small saucepan, combine the vinegar, sugar, cloves, allspice, and salt. Bring to a boil and cook for 5 minutes.
  5. Pickle the beets: Pour the hot brine over the sliced beets.
  6. Chill: Refrigerate for at least 1 hour to let the flavors develop.
  7. Serve: Drain the beets before serving.
