Stovetop Banana Cornmeal Cake

Ingredients

  • 1 ripe banana, mashed
  • 1 egg
  • 1/2 cup cornmeal
  • 2 tablespoons tapioca flour
  • 1 teaspoon baking powder
  • 1/2 cup milk
  • Margarine, for greasing the pan

Instructions

  1. Crack the egg into a mixing bowl and whisk until light and foamy.
  2. Add the mashed banana, cornmeal, tapioca flour, and baking powder. Stir well to combine.
  3. Slowly pour in the milk, mixing as you go, until the batter becomes smooth and even.
  4. Grease a ring (tube) pan with margarine, then pour in the batter.
  5. Cover the pan with aluminum foil or a lid. Cook on the stovetop over medium heat for about 30 minutes.
  6. Carefully unmold the cake and place it into a second pan to ensure it finishes cooking evenly.
  7. Heat for another 10 minutes, then remove from heat.
  8. Slice and serve warm or at room temperature.
