Instructions

1) Brown the steaks

  1. Warm 2 tablespoons oil in a large skillet over medium-high heat.
  2. Season the steaks with salt and pepper.
  3. Sear until nicely browned, about 2–3 minutes per side.
  4. Move the steaks into the slow cooker.

2) Sauté onions and mushrooms

  1. Add the remaining oil to the same skillet.
  2. Cook the onion and mushrooms until softened, about 5 minutes.
  3. Stir in thyme and paprika and cook for 1 minute more.
  4. Spoon the mixture over the steaks in the slow cooker.

3) Mix the sauce

  1. In a small bowl, whisk together chicken broth, dry sherry, and flour until smooth (no lumps).
  2. Pour the sauce mixture over the steaks and vegetables.

4) Slow cook until tender

  • Cover and cook:
    • Low: 6–8 hours, or
    • High: 4–5 hours
  • The beef should be fork-tender.

5) Make it creamy and finish

  1. Transfer the steaks to a plate and keep warm.
  2. Stir cream and chopped parsley into the slow cooker sauce until fully combined.
  3. Return the steaks to the slow cooker and turn them to coat.
