Apple-Chocolate Mousse

Ingredients

  • 250 g (8.8 oz) dark chocolate
  • 800 g (28 oz) apples
  • 2 star anise (optional)
  • 1 cinnamon stick (optional)
  • Orange zest (optional)

Instructions

  1. Peel and chop the apples into small, even pieces.
  2. Add the apples to a saucepan with a small splash of water and cook over medium heat.
  3. For extra aroma, add cinnamon, star anise, and orange zest (optional). Simmer until the apples are very soft.
  4. Remove any whole spices, then blend the cooked apples into a smooth puree.
  5. Melt the dark chocolate using a heatproof bowl over gently simmering water, or melt it in the microwave in short bursts.
  6. Stir the melted chocolate into the apple puree until the mixture is fully smooth and evenly combined.
  7. Spoon or pour into serving glasses or bowls, then refrigerate for at least 2 hours to set.
  8. Serve chilled.

Serving Tip

  • Finish with whipped cream or a light dusting of cocoa powder for an extra-special touch.
