Creamy Morel Mushroom Soup for Digestive Health

Ingredients
- 200 g fresh morel mushrooms (or dried morels, soaked in warm water)
- 2 garlic cloves, minced
- 1 small onion, finely chopped

- 1 celery stalk, chopped
- 2 tablespoons olive oil
- 4 cups vegetable broth or chicken broth
- 1/2 cup fresh cream (optional, for extra creaminess)
- Salt and black pepper, to taste
- Chopped parsley, for garnish
Instructions
- Prepare the mushrooms (if dried): Soak dried morels in warm water for about 20 minutes. Drain, and reserve the soaking liquid.
- Sauté the aromatics: Warm the olive oil in a pot over medium heat. Add the onion and garlic, then cook until soft and translucent.
- Cook the vegetables: Add the carrot and celery. Sauté for around 5 minutes, stirring occasionally.
- Add the morels: Stir in the morel mushrooms and cook for 3–5 minutes to release their flavor.
- Pour in the broth: Add the vegetable or chicken broth. If you used dried morels, you can replace part of the broth with the reserved soaking liquid for deeper mushroom flavor. Bring to a boil.
- Simmer: Lower the heat and let the soup gently simmer for about 20 minutes.
- Make it creamy (optional): Stir in the fresh cream and mix until smooth and well combined.
- Serve: Ladle into bowls and finish with chopped parsley. Serve hot.
