Easy Sugar-Free Strawberry Cheesecake Pie (Diabetic-Friendly)

I’ve made this dessert twice now for a close friend who has diabetes, and it’s become a real favorite. It’s quick, simple, and genuinely delicious—the kind of recipe that makes everyone happy, not just the person it’s made for.

The first time I prepared it was for his birthday, and he was absolutely beaming. Since fruit can cause his blood sugar to rise, I also tested a lower-sugar option by topping it with whipped cream (0 carbs) and folding in fat-free chocolate pudding. Another time, I swapped the cheesecake pudding for fat-free white chocolate pudding to create a white chocolate cheesecake-style version.

Ingredients

For the crust

  • 3/4 cup graham cracker crumbs
  • 3 tablespoons butter, melted
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

For the filling and topping

  • 1 (8 oz) package cream cheese, softened
  • 1 1/2 cups milk
  • 1 (1 oz) package sugar-free instant cheesecake pudding mix
  • 2 pints fresh strawberries, sliced

Instructions

  1. Make the crust: In a bowl, combine the graham cracker crumbs, melted butter, cinnamon, and nutmeg until evenly blended.
  2. Form the base: Press the crumb mixture firmly into an 8-inch pie dish to create an even crust. Refrigerate while you prepare the filling.
  3. Start the filling: In a mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth.
  4. Add the milk slowly: Reduce mixer speed to low and pour in the milk gradually. The mixture may look thin at first—this is normal. Scrape down the sides with a spatula as needed.
  5. Thicken with pudding mix: Add the sugar-free cheesecake pudding mix and beat until the filling becomes thick, creamy, and lump-free.
  6. Layer the pie: Spoon half of the filling into the chilled crust, then add half of the sliced strawberries over the top.
  7. Repeat layers: Add the remaining filling, then finish with the remaining strawberries.
  8. Chill to set: Refrigerate until firm and cold, for at least 1 hour.
