Fluffy Homemade Pancakes

Ingredients

For the Pancake Batter

  • 2 cups all-purpose flour
  • 1 1/2 cups milk
  • 2 eggs
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter

For Cooking

  • 1 tablespoon butter or oil (for greasing the pan)

Instructions

1) Make the Batter

  1. In a large bowl, whisk the eggs, sugar, and vanilla extract until evenly blended.
  2. Pour in the milk and melted butter, then whisk again until smooth.
  3. In a separate bowl, sift together the flour, baking powder, and salt.
  4. Add the dry mixture to the wet ingredients a little at a time, stirring gently just until a smooth batter comes together. Do not overmix—this helps keep the pancakes light and fluffy.

2) Cook the Pancakes

  1. Warm a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  2. Pour a ladle of batter onto the hot surface and gently spread it into a round shape.
  3. Cook for 2–3 minutes, until bubbles form on top and the edges start to look set.
  4. Flip carefully and cook for another 2 minutes, or until both sides are golden brown and the center is cooked through.

3) Serve and Enjoy

  1. Move the pancakes to a plate and repeat with the remaining batter.
  2. Serve warm with your favorite toppings, such as maple syrup, honey, fresh fruit, or butter.

These fluffy pancakes taste best fresh off the pan—perfect for a cozy morning meal or a sweet afternoon bite.
