Fluffy Homemade Pancakes

Ingredients
For the Pancake Batter
- 2 cups all-purpose flour
- 1 1/2 cups milk
- 2 eggs
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter

Instructions
1) Make the Batter
- In a large bowl, whisk the eggs, sugar, and vanilla extract until evenly blended.
- Pour in the milk and melted butter, then whisk again until smooth.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Add the dry mixture to the wet ingredients a little at a time, stirring gently just until a smooth batter comes together. Do not overmix—this helps keep the pancakes light and fluffy.
2) Cook the Pancakes
- Warm a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
- Pour a ladle of batter onto the hot surface and gently spread it into a round shape.
- Cook for 2–3 minutes, until bubbles form on top and the edges start to look set.
- Flip carefully and cook for another 2 minutes, or until both sides are golden brown and the center is cooked through.
3) Serve and Enjoy
- Move the pancakes to a plate and repeat with the remaining batter.
