Pickled Beets (Easy Refrigerator Recipe)
Ingredients
- 8 medium fresh beets
Pickling Brine
- 1 cup vinegar
- 1/2 cup sugar
- 1 1/2 teaspoons whole cloves
- 1 1/2 teaspoons whole allspice
- 1/2 teaspoon salt

Instructions
- Prepare the beets: Scrub the beets clean and trim the tops, leaving about 1 inch of stem.
- Cook until tender: Place the beets in a large pot and add enough water to fully cover them. Bring to a boil, then reduce the heat. Cover and simmer for 25–30 minutes, or until the beets are tender.
- Cool, peel, and slice: Remove the beets from the water and let them cool. Peel off the skins, slice the beets, and transfer them to a bowl. Set aside.
- Make the brine: In a small saucepan, combine the vinegar, sugar, cloves, allspice, and salt. Bring to a boil and cook for 5 minutes.
- Pickle the beets: Pour the hot brine over the sliced beets.
- Chill: Refrigerate for at least 1 hour to let the flavors develop.
- Serve: Drain the beets before serving.
