No-Bake Peanut Butter Cheesecake Balls (Chocolate-Dipped)
Creamy, rich, and perfectly bite-sized, these peanut butter cheesecake balls are an easy no-bake dessert you can make with just a handful of pantry staples. They’re ideal for holiday trays, parties, edible gifts, or quick sweet cravings—and they store beautifully in the fridge or freezer.

Ingredients
- 8 oz cream cheese, softened
- 1/2 cup creamy peanut butter
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 1/2 cups graham cracker crumbs
- 1 1/2 cups chocolate chips (semi-sweet or milk chocolate)
- 1 tablespoon coconut oil or vegetable shortening (helps the chocolate melt smoothly)
- Crushed peanuts or extra graham cracker crumbs (optional, for garnish)

Make the cheesecake mixture
In a mixing bowl, beat together the softened cream cheese, peanut butter, powdered sugar, vanilla extract, and salt until the texture is smooth and creamy. -
Add the crumbs
Stir in the graham cracker crumbs and mix until everything is fully combined. The dough should be thick enough to roll. If it feels too soft, refrigerate it for 15–20 minutes to firm up. -
Roll and chill
Scoop and roll the mixture into 1-inch balls, then arrange them on a parchment-lined baking sheet. Refrigerate for at least 30 minutes. -
Melt the chocolate coating
Place the chocolate chips and coconut oil (or shortening) in a microwave-safe bowl. Microwave in 20-second bursts, stirring between each round, until melted and glossy. -
Dip the cheesecake balls
Using a fork or toothpick, dip each chilled ball into the melted chocolate to coat evenly. Let excess chocolate drip off, then return to the parchment. -
Garnish and set
While the chocolate is still wet, top with crushed peanuts or graham cracker crumbs (optional). Chill again for 20–30 minutes, or until the coating is firm. -
