Crispy Scored Potatoes (Oven-Baked)
These oven-roasted scored potatoes turn golden and crunchy on the outside while staying soft and fluffy inside. The crisscross cuts help the seasoning soak in for extra flavor.

Ingredients
- 4 medium potatoes
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried rosemary
Directions
- Preheat the oven to 425°F (220°C).
- Rinse the potatoes well, then pat them completely dry.
- Using a sharp knife, score the tops with a crisscross pattern, cutting about 1/4 inch (6 mm) deep.
- Arrange the potatoes on a sheet pan.
- In a small bowl, stir together the olive oil, salt, black pepper, garlic powder, and rosemary.
- Brush the mixture generously over each potato, making sure the oil and spices get into the cuts.
- Bake for 35–40 minutes, until the potatoes are crisp outside and tender inside.
- Let them cool for a few minutes, then serve warm.
