These oven-roasted scored potatoes turn golden and crunchy on the outside while staying soft and fluffy inside. The crisscross cuts help the seasoning soak in for extra flavor.

Ingredients

  • 4 medium potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary

Directions

  1. Preheat the oven to 425°F (220°C).
  2. Rinse the potatoes well, then pat them completely dry.
  3. Using a sharp knife, score the tops with a crisscross pattern, cutting about 1/4 inch (6 mm) deep.
  4. Arrange the potatoes on a sheet pan.
  5. In a small bowl, stir together the olive oil, salt, black pepper, garlic powder, and rosemary.
  6. Brush the mixture generously over each potato, making sure the oil and spices get into the cuts.
  7. Bake for 35–40 minutes, until the potatoes are crisp outside and tender inside.
  8. Let them cool for a few minutes, then serve warm.
