Ingredients

  • 1 cup crunchy peanut butter (chunky works best)
  • 6 tablespoons honey (for extra sweetness)
  • 1/8 teaspoon salt (a small pinch to brighten the flavor)
  • 3 cups Rice Krispies cereal (for that classic crisp texture)
  • 1 1/2 cups vegan chocolate chips (for a rich chocolate topping)

Preparation

  1. Prep the pan. Line a muffin pan with paper liners. Lightly spray the liners with non-stick spray so the cups release cleanly later.
  2. Melt the peanut butter base. In a saucepan over low heat, warm the peanut butter, honey, and salt, stirring continuously until the mixture is fully melted and smooth.
  3. Add the cereal. Remove from heat and immediately stir in the Rice Krispies. Mix until every piece is well coated.
  4. Fill and press. Spoon the mixture evenly into the lined muffin cups. Press down firmly to compact the layers and help the treats hold together.
  5. Melt the chocolate. In a separate saucepan on low heat, melt the vegan chocolate chips, stirring constantly until silky and smooth. Avoid overheating.
  6. Top with chocolate. Spoon the melted chocolate over each cup, spreading it evenly. Add swirls or simple patterns if you’d like.
  7. Chill to set. Refrigerate the muffin pan until the treats are firm.
