  • 1/2 cup (100 g) sugar
  • 2 cups (500 ml) heavy cream
  • 2 teaspoons gelatin powder
  • 3 tablespoons cold water
  • 2 tablespoons caramel sauce
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • 1/4 cup (40 g) chopped peanuts (for garnish)

Instructions

  1. Bloom the gelatin
    In a small bowl, combine the gelatin powder with the cold water. Let it sit for about 5 minutes to bloom.

  2. Create the caramel
    Place the sugar in a saucepan over medium heat. Allow it to melt without stirring until it becomes a rich golden color. Carefully pour in the milk while stirring (it may bubble), then keep stirring until the caramel dissolves smoothly.

  3. Warm the cream mixture
    Add the heavy cream, caramel sauce, vanilla extract, and salt to the pan. Stir until well combined and gently heat until warm—do not let it boil.

  4. Add the gelatin
    Take the saucepan off the heat. Stir in the bloomed gelatin and mix until it is fully dissolved.

  6. Chill until set
    Refrigerate for at least 4 hours, or until the caramel cream is fully set.
