Ingredients
- 1 cup (250 ml) milk
- 1/2 cup (100 g) sugar
- 2 cups (500 ml) heavy cream
- 2 teaspoons gelatin powder
- 3 tablespoons cold water
- 2 tablespoons caramel sauce
- 1 teaspoon vanilla extract
- A pinch of salt
- 1/4 cup (40 g) chopped peanuts (for garnish)
Instructions
-
Bloom the gelatin
In a small bowl, combine the gelatin powder with the cold water. Let it sit for about 5 minutes to bloom. -
Create the caramel
Place the sugar in a saucepan over medium heat. Allow it to melt without stirring until it becomes a rich golden color. Carefully pour in the milk while stirring (it may bubble), then keep stirring until the caramel dissolves smoothly. -
Warm the cream mixture
Add the heavy cream, caramel sauce, vanilla extract, and salt to the pan. Stir until well combined and gently heat until warm—do not let it boil. -
Add the gelatin
Take the saucepan off the heat. Stir in the bloomed gelatin and mix until it is fully dissolved. -
Strain and portion
Strain the mixture to remove any bits or lumps, then pour into serving glasses or dessert cups. -
Chill until set
Refrigerate for at least 4 hours, or until the caramel cream is fully set. -
Finish and serve
Just before serving, top each portion with chopped peanuts for a sweet-and-salty crunch.
Serving Tip
Serve this caramel cream well chilled for the best texture. Every spoonful delivers a balance of creamy, sweet caramel and nutty crunch. Enjoy!
