Ingredients
- 1 cup (250 ml) milk
- 1/2 cup (100 g) sugar
- 2 cups (500 ml) heavy cream
- 2 teaspoons gelatin powder
- 3 tablespoons cold water
- 2 tablespoons caramel sauce
- 1 teaspoon vanilla extract
- A pinch of salt
- 1/4 cup (40 g) chopped peanuts (for garnish)
Instructions
-
Bloom the gelatin
In a small bowl, combine the gelatin powder with the cold water. Let it stand for about 5 minutes to hydrate and thicken. -
Create the caramel
Place the sugar in a saucepan over medium heat. Allow it to melt without stirring until it becomes golden amber. -
Add the milk carefully
Slowly pour in the milk while stirring (the caramel will bubble). Keep stirring until the caramel fully dissolves into the milk. -
Build the creamy caramel mixture
Add the heavy cream, caramel sauce, vanilla extract, and salt. Stir well and warm the mixture until hot but not boiling. -
Dissolve the gelatin
Take the pan off the heat. Add the bloomed gelatin and stir until it’s completely melted and smooth. -
Strain and portion
Strain the mixture to remove any lumps, then pour into individual serving glasses. -
Chill until set
Refrigerate for at least 4 hours, or until the caramel cream is fully set. -
Finish and serve
Just before serving, top with chopped peanuts for a satisfying crunch.
Serve and Enjoy
This caramel cream with peanuts delivers a balanced mix of creamy, sweet, and nutty flavors. Serve it well chilled and enjoy every spoonful.
