- 30 g cornstarch (Maizena)
- 100 g sugar (divided)
- 30 g butter

- 4 egg whites

Add the milk, vanilla pod, 60 g sugar, butter, and cornstarch to the Thermomix bowl. Cook for 10 minutes, 100°C, speed 3. -
Cool, then freeze
Transfer the hot mixture to a freezer-safe container. Let it cool completely to room temperature, then freeze for at least 4 hours. This freezing step is key to getting the right Sandy-style consistency. -
Whip the egg whites for an airy texture
Wash and dry the Thermomix bowl. Add the remaining 40 g sugar and grind for 10 seconds, speed 10.
Insert the butterfly whisk, add the egg whites, and whip for 8 minutes, speed 3, until stiff peaks form. -
Blend the frozen base with the egg whites
Take the frozen cream mixture out of the freezer and cut it into small chunks. Add the pieces to the Thermomix bowl along with the whipped egg whites. Mix for 45 seconds, speed 3, until creamy and smooth.
