Spinach and Feta Filo Triangles (with Poppy Seeds)

These crispy filo triangles are filled with savory spinach and feta, then finished with a golden egg wash and a sprinkle of poppy seeds. They’re quick to prepare and ideal as a snack, appetizer, or light meal.

Ingredients

  • 125 ml (1/2 cup) milk
  • 125 ml (about 1/2 cup) vegetable oil
  • 2 tablespoons water
  • 1 teaspoon salt
  • Spinach (cooked)
  • Feta cheese
  • Salt and pepper (to taste)
  • 3 sheets/rolls filo dough
  • Poppy seeds (for topping)
  • 1 egg yolk (for brushing)

Preparation

  1. Prepare the liquid mixture.
    In a bowl, combine the milk, vegetable oil, water, and salt. Mix until well blended.

  2. Layer the filo.
    Lay out one sheet of filo dough. Drizzle a small amount of the milk-oil mixture over the surface and spread it evenly.
    Repeat with two more sheets, creating 3 layers in total.

  3. Make the filling.
    Mix the feta with the cooked spinach. Season with salt and pepper as needed.

  4. Fill and roll.
    Spread the spinach and feta mixture over the layered filo. Roll it up from one end to the other to form a long strip.

  5. Cut into triangles.
    Slice the rolled strip into triangle portions and arrange them on a baking tray.

  6. Add topping.
    Brush each triangle with egg yolk, then sprinkle poppy seeds on top.

  7. Bake.
    Bake at 180°C (356°F) for 15 minutes, or until crisp and golden.
