These Pecan Cheesecake Squares bring together three favorite desserts in one pan: a buttery pecan shortbread base, a creamy vanilla cheesecake layer, and a glossy pecan pie topping. They’re an ideal make-ahead treat for holidays, celebrations, and dessert tables.

Ingredients
For the Shortbread Layer
- 1 cup all-purpose flour
- 3/4 cup light brown sugar, firmly packed
- 1 cup butter, softened
- 1/2 cup pecans, finely chopped
For the Cheesecake Layer
- 2 packages (8 oz each) cream cheese, softened
- 1/2 cup granulated sugar
- 1/2 cup milk
- 2 teaspoons vanilla extract
For the Pecan Pie Layer
- 1 cup light brown sugar, firmly packed
- 1/2 cup light corn syrup
- 1/2 cup butter, melted and slightly cooled
- 3 large eggs, lightly beaten
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 cup pecans
Instructions
1) Heat the Oven
Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan.
2) Make the Shortbread Base
- In a medium bowl, mix the flour with 3/4 cup brown sugar.
- Cut in the softened butter using a fork or pastry cutter until you get a crumbly, coarse texture.
- Fold in 1/2 cup chopped pecans.
- Press the mixture firmly and evenly into the bottom of the prepared pan.
- Bake for 10 minutes, then set aside to cool for 10–15 minutes.
3) Mix the Cheesecake Layer
- In a large bowl, beat cream cheese and granulated sugar until smooth.
- Add the milk gradually, then mix in vanilla extract until fully blended.
- Spread the cheesecake filling evenly over the slightly cooled shortbread crust.
4) Prepare the Pecan Pie Topping
- In a separate bowl, whisk together brown sugar, corn syrup, melted butter, eggs, salt, and vanilla until smooth.
- Stir in 1 cup pecans.
- Carefully pour the topping over the cheesecake layer, spreading gently to cover the surface.
5) Bake, Then Cool Completely
Bake for 35–40 minutes at 350°F (175°C), until the pecan layer looks set and golden. Cool completely in the pan before slicing into squares.
Tips for Perfect Layers
- Use room-temperature ingredients: Soft cream cheese blends faster and prevents lumps in the cheesecake filling.
- Cool before cutting: Full cooling helps the bars set so you get neat, defined layers.
- Switch up the nuts: Add variety by mixing walnuts or almonds with the pecans.
Why You’ll Love These Bars
