Banana Cornmeal Cake (Stovetop Recipe)

Ingredients
- 1 ripe banana, mashed
- 1 egg
- 1/2 cup cornmeal
- 2 tablespoons tapioca flour
- 1 teaspoon baking powder
- 1/2 cup milk
- Margarine, for greasing the pan
Instructions
- Crack the egg into a mixing bowl and whisk until light and foamy.
- Add the mashed banana, cornmeal, tapioca flour, and baking powder. Stir well to combine.
- Slowly pour in the milk, mixing as you go, until the batter becomes smooth and even.
- Grease a ring (tube) pan with margarine, then pour in the batter.
- Cover the pan with aluminum foil or a lid. Cook on the stovetop over medium heat for about 30 minutes.
- Carefully unmold the cake and place it into a second pan to ensure it finishes cooking evenly.
- Heat for another 10 minutes, then remove from heat.
- Slice and serve warm or at room temperature.
